Different label displays for entity types

I'm currently trying to create separate entity user interfaces for individuals and organizations in Providence. I'm struggling to figure out how to configure the label bundle so that it only shows the surname/organization name and displayname for organizations, and the full name (first/middle/last) for individuals. The CollectiveAccess Cookbook suggests that this is possible through the GUI, but the posted solution only seems to get me halfway there (plus, I can't find the "Entity Class" setting in the entity_types list items).

Is this actually possible in Providence and, if so, how do I make it happen?
